So what gave you the idea that you could buy a property with a winery attached to it? Somewhere in your background it says, okay, I'm up for adventure, or you just didn't know how big of a bite you were taking here.


Rasmus Emborg

I think it's a bit of a lot of things. I mean, we are definitely in for adventure. We like southern France.

We like to go there on holiday, and we also did that before we bought our property. My wife is very much into interior design and decor and so on, and she's put a lot of effort into turning this into a beautiful place.

I'm very much into wine, and I was really thrilled by the opportunity to get closer to wine and to wine production. But it all came together and we bought it now almost 12 years ago, and, well, we've never regretted it.

So when you started drinking, you know, having raising the grapes on your property, was there something along the line you were thinking that before this, you thought rose was one thing, but then after you started drinking it, did you formulate your opinion or were surprised about something?


Rasmus Emborg

Yeah, Forrest, you got a point here.

Because before I bought the vineyard and we bought the vineyard, I had a glass of rose every now and then and then, usually on a hot day at the coast or at a swimming pool.

But when I started exploring the world of roseille and drinking a lot of it, testing different varieties and getting to know the different producers and so on, it was really a big experience because I found out that Roset wine is also quality wine. I mean, you can really have some good experiences with rose wine, not only at the water or at the pool.

And what I experienced during the years now we've been going there for now 12 years, is that actually the wine. Wines get better year after year. Some of the leading producers are really putting a lot of effort into developing the wines.

So what I experienced was that the quality of the wine simply got better and better.

And at the same time, the wine got more and more popular, the sales going up, and the seemed to have hit kind of an upgoing trend that really caught my interest, and that was basically what gave me the idea of making this book.

You said now you picked out, what is it, 13 producers that produce. Right?


Rasmus Emborg

Yeah.


Forrest Kelly

Did you have to whittle that down? Is it a bigger number or that's basically within your Region.

I see you went to different places, but was that all of them or did you have to narrow it down?


Rasmus Emborg

No, we definitely had to narrow it down because we have been visiting a lot of producers, and we've not only been to the southern part of France, of course, Provence is kind of the heartland of Brazil wine. So a number of the producers in the book are from there. And then for good reason. But, I mean, we've been all around the world.

We've also been to the U.S. we have a producer from California and one from Long Island. We have a couple from. From Spain, one from Italy, one from Germany.

We have been up in the Champagne district and so on. So we've basically been around the world to visit these producers.

And each producer is picked because the producer has a significant story, a fascinating story, but also a story that is kind of bringing peace into the big story of. So you can say the producers, they represent the diversity, quality and creativity that define today.

Just in the United States, from California, there's. Imagine that there's a big difference.


Forrest Kelly

I know the California lifestyle is different than Long Island, New York, but are all of these producers that you run across out of these 13 people, do they have a commonality, or are they coming about making this all from different kind of directions and experiences and stories?


Rasmus Emborg

Well, they definitely represent the diversity.

And I mean, if you go from our producer, Lobes de Heredia, they don't release their rose wine until it's been aged on barrels and bottles for at least 10 years. There's definitely a difference to what we call the Provence style rose.

This light, pale and very dry and crispy rose that kind of is the most popular rose all around the world. When you visit the different producers around the world, you see a lot of them are inspired by this provong style rose, dry, pale, very crisp wine.

But they are all different. And that has been really a great part of this. And this is also what we want to bring forward to the readers, that not just rose.

Rose is like, if you dig into the red wine category or the white wine category, there's a huge variety, both when it comes to the selection of grapes, when it comes to the methods you use for producing it, and at the end, what you get in your nose and in your mouth when you. When you have a glass of rose.

And I think this is, for some people, a new experience, because I think a part of the story of rose is that it's been kind of looked down upon. I mean, a lot of people have seen it not as a real wine, and for many years it was looked down upon.

I think many people have enjoyed a glass of rose with some ice cubes in because the most important thing was not what it tasted like, but just that it was chilled. And a lot of things have happened in the past couple of decades.

So the way we look at today is very different and has developed into a category on its own, the Best.
